Yesterday, I was leafing through the latest issue of the Martha Stewart magazine and came across a cookie recipe which ingredients included pine nuts and almonds. Since FG is a vegetarian who doesn’t really like nuts, I’m always trying to find ways to sneak them into her diet. Nuts are soooo healthy! Since I had pine nuts & almonds in stock, I gave the recipe a try.
Oh, my…I honestly couldn’t stop eating them. They are light and so delicious. Then FG came home from school and she too couldn’t get enough of them. I knew they would be even tastier with my morning tea but, unfortunately, the sitter & FG finished them off last night while FM & I were out.
Unfortunately, Martha’s recipes don’t include nutritional values but this one seems healthy, has limited ingredients and is easy to make. No butter or oil needs to be added. If you want to give it a try, click here.

Since D. can’t have flour, I make a lot of baked goods using almond meal (sometimes called almond flour) instead. Here’s a simple recipe for peanut butter cookies that uses almond meal (you can usually find it in the health food section). My kids even like them. They’re certainly not low-calorie, but you will get a healthy dose of nuts. Try them if you’d like!
1/2 cup butter
1 cup natural peanut butter
1/2 cup honey
1 cup almond meal/almond flour
2 eggs
1/4 tsp baking soda
1 tsp vanilla
Cream butter; add peanut butter and blend. Add remaining ingredients. Drop on cookie sheet and bake about 12 minutes at 325 degrees.

Hmmm, this recipe also happens to be gluten-free so I can eat them, may have to give it a try:)

Sanding sugar is a coarse sugar which comes in all different colors, is used for decorating cupcakes, cookies, etc. and it doesn’t dissolve when heated. More info here: http://www.gourmetsleuth.com/sandingsugar.htm
I skipped that step since I didn’t have nor want the additional sugar and they tasted GREAT without it. I’m going to make them for St. Patrick’s Day using green sanding sugar if I can find green colored sugar somewhere in our town. I’m thinking Michaels will have it.
